I see so many tomato soup recipes online—some call for fresh tomatoes, others for canned. But if you ask me, nothing beats a fire-roasted fresh tomato soup made in a pizza oven. It’s smoky, pure, and clean in flavor—and so easy to make. Everything goes into one pan, gets roasted in the pizza oven, and in just 10 minutes, you have the perfect soup base. Blend until smooth, strain through a fine sieve, and serve in two cups with grilled cheese sticks. It’s the ultimate cozy recipe for a night in with your partner— even better as a Valentine’s Day appetizer.

Ingredients
For the soup:
7 Campari tomatoes
4 branches of cherry tomatoes (6 8 tomatoes on each branch)
8 garlic confit cloves
1 long hot green chili
5 ½ fresh thyme stems
1 tbsp olive oil
Salt (to taste)
Black pepper (to taste)
For the grilled cheese:
2 slices of brioche bread
2 cheddar cheese slices
Sip of water
