Ancient Halloween Recipe: Soul Cake

The giving and receiving of soul cakes started in the Middle Ages and is widely seen as the origin of trick or treating. Soul cakes are small cakes traditionally baked as a way to honor ancestors, departed loved ones, and celebrate the beauty of life on Samhain, the festival which gave us modern day Halloween. The giving of a soul cake represents the liberation of a soul from purgatory. These small round cakes made of flour and spices were given as offerings and were generally made with ingredients like oats or wheat, honey, butter or oil for sustenance; salt for wisdom; cinnamon to help banish negative energies; nutmeg to bring prosperity into your home; and ginger for healing.

Ingredients

360 gr AP flour

170 gr butter (soft)

150 gr sugar (+a little more for decoration)

100 gr currants

3 free range egg yolks

½ tsp cloves

½ tsp nutmeg

¼ teaspoon Mace powder (optional)

7 ½ saffron

Directions

Step 1

Preheat your oven to 350F or 180C.

Step 2

In a bowl, cream the butter and the sugar.

170 gr butter (soft)

150 gr sugar (+a little more for decoration)

Step 3

Add the egg yolks, one at a time, and mix until incorporated in the batter.

3 free range egg yolks

Step 4

Add the spices, and mix.

½ tsp cloves

½ tsp nutmeg

¼ teaspoon Mace powder (optional)

7 ½ saffron

Step 5

Sift the flour into the batter and fold until incorporated. Don’t overmix.

360 gr AP flour

Step 6

Add the currants and mix just until incorporated.

100 gr currants

Step 7

On a floured surface, using a rolling pin, open the dough into 1 cm thickness.

Step 8

Using a cup or a cookie cutter, score the dough and transfer to a baking tray (with a baking sheet).

Step 9

Gently score a cross on top of each cookie. You can also cover that cross with currants.

Step 10

Sprinkle a little bit of sugar on top of the cookies.

Step 11

Bake for 12-15 min.
