One Bowl Apple Cake

This is one of the easiest apple cakes you could ever ask for. One of the reasons I love making this cake is because you don't need to stress out about washing dishes; this cake is all done in one bowl. First, we combine all the wet ingredients, then add the dry ingredients on top, fold them in, and add the apples. After that, transfer the mixture to the baking pan and top it with caramel sauce once it's baked. This cake is one of my favorite ways to celebrate the apple season, especially during Rosh Hashanah.

Ingredients

For the cake:

4 apples

320 gr AP flour

240 gr extra virgin olive oil

200 gr sugar

200 gr unsweetened applesauce

100 gr brown sugar

30 gr milk

4 pasture raised eggs, at room temperature

2 teaspoons baking powder

2 teaspoons cinnamon powder

1 teaspoon baking soda

1 teaspoon vanilla paste

½ teaspoon salt

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon allspice

For the caramel sauce

200 gr brown sugar

120 gr heavy cream

60 gr powdered sugar

60 gr unsalted butter

A small pinch of salt

Directions

Step 1

Preheat your oven to 350F or 180C.

Step 2

Peel, core and cut the apples into 1/2 inch size pieces.

In a bowl combine the eggs, vegetable oil, apple sauce, white sugar, brown sugar, milk and vanilla. Mix until homogenous.

100 gr brown sugar

30 gr milk

1 teaspoon vanilla paste

Step 4

Add the dry ingredients on top of the wet ingredients mix- AP flour, baking powder, baking soda, cinnamon, ground nutmeg, ground ginger, allspice, and salt. Fold in just until almost completely combined.

¼ teaspoon ground ginger

¼ teaspoon allspice

½ teaspoon salt

Step 5

Add the apple pieces in the mixture and fold them in just until they are evenly distributed.

Step 6

Pour the cake batter into a cake pan lined with a parchment paper (will be easier to remove the cake from the pan after baking). Using a spatula, spread the batter evenly in the pan.

Step 7

Bake for 50-60 min or until the cake passes the toothpick test.

Step 8

In the meantime, work on the caramel sauce- in a small pot combine the brown sugar, heavy cream, butter and salt. Bring to boil while mixing constantly. Once it starts to boil, remove from the heat, add the powdered sugar in, mix well and put aside to cool down to room temperature.

Step 9

After the cake has been baked, let it cool to room temperature before removing from the pan.

Step 10

Once the cake has cooled, remove from the pan, pour the caramel sauce on top and spread evenly.

Step 11

Cut into pieces and share with your loved ones!

Made this with fresh-picked apples (and homemade applesauce) while on a trip to Maine. Absolutely incredible! Sweet and decadent! (I skipped the eggs, because I'm allergic, by the way, and still turned out wonderful - more than enough binder/moisture from all the apples).

Holy moly! I’m not a sweet person, and I think this is my favorite cake. I substituted cinnamon applessauce (and about 50g less sugar) using what we already had in the house. Thanks for creating this recipe! ❤️
