We've got all the fixings for a fiesta in your mouth: homemade flour tortillas, fluffy scrambled eggs, hearty black beans, creamy avocado, tangy pickled onions, spicy hot habanero sauce, fresh cilantro, and of course, the star of the show - crispy chorizo. You may be thinking "wow, that sounds like a lot of work." But fear not, amigos! This recipe is easy-peasy and will have you feeling like a top chef in no time. With just a few simple steps, you'll have a delicious and satisfying breakfast that's full of flavor and sure to impress. So, are you ready to fire up the stove and get cookin'? Let's do this!

Ingredients

4 flour tortillas

1 can of black beans

1 tsp Tajin

½ Juice from a lime

4 pasture raised eggs

2 chorizos

1 avocado

1 red onion

2 tbsp maple syrup

1 teaspoon salt

150 gr warm water

150 gr vinegar

Cilantro

Habanero hot sauce

Directions

Step 1

Start by pickling your red onion- slice the red onion as thin as possible.

Step 2

In a small container combine maple syrup, salt, warm water and vinegar. Mix well and add the red onions in. Keep aside until you ready to plate (can be done in advance).

Step 3

Slice the avocado as thin as you like. You can squeeze a lime on the avocado to avoid it from browning.

Step 4

Whisk the eggs into a fluffy mix.

In a pan- add the black beans, Tajin and a squeeze of lime juice. Cook on medium heat and smash to create a rough paste.

Step 6

Cook the paste for about 5 min until the paste thickens.

Step 7

Remove the case from the chorizo.

Step 8

In a pan, add the chorizo, crumble it, and cook until crispy.

Step 9

Remove from the pan and add the eggs so they cook in the chorizo fat.

Step 10

Cook the eggs to a soft scrambled eggs.

Step 11

Warm up your flour tortillas and let's plate!

Add a tbsp of the black bean paste, add a bit of scrambled eggs, a few slices of avocado, chorizo, pickled onions, hot sauce to your liking and cilantro on top.
