Herby Chopped Watermelon Salad

It's so much more versatile, and it truly shines as the foundation of a savory dish. In this case, we're talking about a diced watermelon salad infused with a burst of herbs. Imagine this: juicy watermelon chunks mingling with the vibrant notes of freshly chopped cilantro, parsley, and mint. And let's not forget the zingy twist brought by the lemon. Ingredients

1 tbsp extra virgin olive oil

1 Juice from lemon

1 Zest from lemon

watermelon, cubed

¼ bunch of cilantro

¼ bunch of parsley

¼ bunch of mint

½ tsp black pepper, crushed

Atlantic sea salt to taste

Yogurt, for serving

Directions

Step 1

Cut the watermelon into 1/2 inch size cubes. Add them into a mixing bowl.

Chop the cilantro, parsley and mint as thin as possible. Add into the mixing bowl.

¼ bunch of mint

Step 3

Zest the lemon into the mixing bowl. Cut the lemon in half and squeeze all the juice into the mixing bowl.

Step 4

Season with salt, black pepper and extra virgin olive oil.

½ tsp black pepper, crushed

1 tbsp extra virgin olive oil

Step 5

Add 1-2 tbsp of yogurt in the middle of the serving plate, and with the spoon spread the yogurt to the side of the plate in a circular motion.

Add the salad on top of the yogurt and drizzle more extra virgin olive oil.
