Crispy golden brown eggplant tossed in summer herbs, garlic, shallots, and some red wine vinegar - & preserved in olive oil? Wow. Perfect on toast for lunch, with egg for breakfast, or as a small plate for your impromptu dinner party! Important to note in this recipe: Do NOT skip the step where you salt your eggplants. They must be salted and they must release their water content in order to achieve that perfect golden brown when you are frying.
